Look what I found!
A few months ago I planted a sweet potato that had sprouted in the pantry. It kept growing tons of vines (on the right of the photo), so I tossed them over the side of the 3-foot-high raised bed. Looks like it's been hard at work.
I hear that you're supposed to dig them up 2 weeks after the plant flowers... or when the leaves turn brown... or right before the first frost (if they are left out after the frost, they may rot in the ground). It was planted quite late, so I doubt it'll flower before the first frost hits.
Then after you harvest them, just lightly brush off the dirt, and store at 80-90 degrees for 10 days, then store in a cool humid place (not lower than 50 degrees) for up to 6 months. The warming and cooling process is supposed to make them both sweeter and nutritious... plus they don't bake well straight out of the ground.
The first frost date for my area is November 21st, so I am expecting to dig them up soon.
