Mediocre Cinnamon Rolls... do yourself a favor and don't make these.

Just for my records, so that I can figure out where to improve the recipe:

Mix and place in bread maker on "pizza dough" setting:
  • 2c bread flour
  • 1tsp sugar
  • 1tsp salt
  • 1tbsp olive oil
  • 3/4c water
  • 1.5tsp yeast
When machine is done, dump dough onto a floured surface, and roll out into a rectangle about 8x11".  Coat with melted butter, 4tbsp brown sugar, 2tbsp cinnamon.  Roll up and slice into 8 pieces, and place sideways in a round pan.  Let rise 40 min.

Bake at 400 for 25 min.

Notes:  Recipe found on a random forum for bread makers, unknown source.  Smelled perfect, looked perfect.  Edible if drowned in butter.  Used the ceramic pie pan.  Flavor was too "floury."  Texture was far too dry (but more moist by day 2), and not quite fluffy enough... texture was supposed to be "crunchy on top, gooey on bottom" but this did not happen.  Cinnamon amount was good, maybe just a little too intense.  Add perhaps an extra 2-4tbsp brown sugar next time?  Try using regular dough setting next time.
